Portuguese Style Rice with Rosemary

Ingredients

3 slices slices bacon, cut crosswise into thin strips
1 medium red onion, chopped (about 1 cup)
1 teaspoon McCormick® Gourmet Collection Garlic Salt
3/4 teaspoon McCormick® Gourmet Collection Rosemary, Crushed
1/4 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind
1 1/4 cups long grain rice
2 medium tomatoes, diced and drained (about 1 1/2 cups)
2 cups chicken broth
1 tablespoon chopped fresh parsley

Directions

1. Cook bacon in large saucepan on medium heat until crisp. Drain on paper towels. Set aside. Reserve 1 1/2 tablespoons bacon drippings in pan.

2. Stir onion, garlic salt, rosemary and pepper into drippings in pan. Cook and stir on medium heat 3 to 4 minutes. Add rice; cook and stir 1 to 2 minutes. Add tomatoes and broth. Bring to boil. Reduce heat to low; cover and simmer 20 minutes or until liquid is absorbed and rice is tender.

3. Remove from heat. Let stand 5 minutes. Add bacon and parsley; fluff with fork.
