Cajun Potatoes and Onions

Ingredients

1/4 cup olive oil
2 large onions, thinly sliced (about 5 cups)
4 russet or Idaho potatoes, peeled, quartered and thinly sliced (6 cups)
1 tablespoon McCormick® Gourmet Collection Cajun Seasoning, divided
1 1/2 cups Kitchen Basics® Original Chicken Stock

Directions

1. Preheat oven to 375°F. Heat oil in large skillet on medium-high heat. Add onions; cook and stir 5 to 10 minutes or until lightly browned.

2. Place half the potatoes in even layer in greased 12x8-inch baking dish. Sprinkle with 1 1/2 teaspoons of the Cajun Seasoning. Top with a layer of half of the onions. Repeat layers of potatoes, onions and remaining Seasoning. Pour chicken stock over top.

3. Bake 45 to 50 minutes or until potatoes are tender. Let stand 5 minutes before serving.
