Cool Cucumber Salad with Wasabi Dressing

Ingredients

2 tablespoons McCormick® Gourmet Collection Wasabi Powder
2 medium cucumbers
1/4 medium red onion
3 tablespoons rice vinegar
1 tablespoon brown sugar
1 teaspoon McCormick® Gourmet Collection Cilantro Leaves
1/4 cup dry roasted peanuts

Directions

1. Mix wasabi with 2 tablespoons water. Let stand 5 minutes.

2. Meanwhile, slice cucumbers lengthwise into quarters. Seed then cut into 1/4-inch slices. Cut onion into thin slices. Stir rice vinegar, brown sugar and cilantro into wasabi.

3. Just before serving, toss cucumbers, onion and peanuts in large bowl. Mix dressing with wire whisk. Pour over salad; toss to coat. Serve on lettuce leaves, if desired.
