Turkish Lamb Kabobs

Ingredients

1/4 cup olive oil
2 tablespoons lemon juice
2 teaspoons McCormick® Gourmet Collection Coriander Seed, Ground
1 teaspoon McCormick® Gourmet Collection Garlic Powder
1 teaspoon McCormick® Gourmet Collection Cumin, Ground
3/4 teaspoon salt
1/4 teaspoon McCormick® Gourmet Collection Red Pepper, Ground Cayenne
1 pound lean boneless lamb, cut into 1 1/4-inch cubes
4 ounces cherry tomatoes
1 medium onion, cut into wedges or 16 shallots, peeled
Mint Yogurt, recipe follows (optional)

Directions

1. Mix oil, lemon juice, coriander, cumin, garlic powder, salt and red pepper in small bowl. Place lamb cubes in large resealable plastic bag or glass dish. Add marinade; turn to coat well.

2. Refrigerate 30 minutes or longer for extra flavor. Remove lamb from marinade. Discard any remaining marinade. Alternately thread lamb, tomatoes and onion onto skewers.

3. Grill over medium-high heat 10 to 12 minutes or until desired doneness, turning occasionally. Serve with Mint Yogurt, if desired.

Tips

Mint Yogurt: Mix 1 cup plain yogurt, 2 tablespoons chopped fresh mint and 1/8 teaspoon McCormick® Gourmet Collection Ground Coriander in small bowl until well blended.

Test Kitchen Tip: If using wooden skewers, soak thoroughly in water for at least 30 minutes before threading with lamb and vegetables. This prevents them from burning when on the grill.
