Rosemary Fig-Glazed Cornish Hens

Ingredients

2 Cornish hens (about 1 1/4 pounds each)
1 tablespoon olive oil
1 teaspoon McCormick® Gourmet Collection Sicilian Sea Salt
1/2 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind
1/2 cup fig preserves
1 teaspoon McCormick® Gourmet Collection Rosemary, Crushed

Directions

1. Preheat oven to 425°F. Brush hens with oil. Sprinkle evenly with sea salt and pepper. Place hens in foil-lined shallow roasting pan. Roast 30 minutes.

2. Meanwhile, mix preserves and rosemary in small microwavable bowl. Microwave on HIGH 15 seconds or just until preserves soften. Brush hens evenly with preserves mixture.

3. Roast 15 minutes longer or until hens are cooked through, brushing every 5 minutes with remaining preserves mixture.

Tips

Test Kitchen Tip: Try also with plum preserves, strawberry rhubarb preserves or roasted garlic & onion preserves. Just be sure to coarsely chop any large pieces of fruit.
