Roasted Sesame Pork Tenderloin and Maple Sweet Potatoes

Ingredients

2 tablespoons maple syrup
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon McCormick® Gourmet Collection Garlic Powder, divided
2 sweet potatoes, cut into 1-inch wedges (1 1/2 pounds)
1 medium red onion, cut into thin wedges
2 pork tenderloins (about 1 pound each)
2 tablespoons sesame oil
1/2 cup plain dry bread crumbs
1/4 cup McCormick® Gourmet Collection Sesame Seed, Black
1 teaspoon kosher salt
1/2 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind

Directions

1. Preheat oven to 450°F. Mix maple syrup, soy sauce, vinegar and 1/2 teaspoon of the garlic powder in large bowl with wire whisk. Add sweet potatoes and onions; toss to coat. Place on large foil-lined shallow baking pan. Roast 15 minutes.

2. Meanwhile brush pork tenderloins with oil. Mix bread crumbs, black sesame seed, salt, pepper and remaining 1/2 teaspoon garlic powder in shallow dish. Roll pork in bread crumb mixture to coat entire surface.

3. Push sweet potatoes and onions to one side of pan. Place pork on other side. Continue to roast for 20 to 25 minutes or until pork is desired doneness. Let stand 5 minutes. Slice pork on an angle into thin slices. Serve with sweet potato mixture.
