1 whole chicken (3 to 4 pounds)4 teaspoons McCormick® Gourmet Collection Herbes de Provence, divided1 teaspoon McCormick® Gourmet Collection Garlic Salt, divided1 tablespoon olive oil4 cups assorted cut-up vegetables, such as potatoes, carrots and onions1/4 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind
1. Preheat oven to 375°F. Place chicken in foil-lined roasting pan. Mix 2 teaspoons of the Herbes de Provence and 1/2 teaspoon of the garlic salt; rub all over chicken.
2. Toss vegetables in large bowl with oil, remaining 2 teaspoons Herbes de Provence, remaining 1/2 teaspoon garlic salt and pepper. Arrange vegetables around chicken.
3. Roast 1 1/4 hours or until chicken is cooked through and vegetables are tender.
