Bourbon Spiced Chicken & Potatoes Skillet

Ingredients

1/4 cup flour
1 package McCormick® Gourmet Bourbon Spiced Pork with Roasted Sweet Potatoes & Apples Recipe & Seasoning Mix, divided
2 1/2 pounds bone-in chicken parts
2 tablespoons olive oil
1 pound potatoes, cut into 1-inch cubes
2 cups baby carrots
1 large red onion, cut into thin wedges
2 cups Kitchen Basics® Chicken Stock or low sodium chicken broth

Directions

1. Mix flour and 3 tablespoons of the Seasoning Mix in shallow dish. Reserve 1 tablespoon. Coat chicken evenly with remaining flour mixture.

2. Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 minutes per side or until golden brown. Remove from skillet. Add potatoes, carrots and onion to skillet; cook and stir 5 minutes.

3. Mix stock, remaining Seasoning Mix and reserved flour mixture until smooth. Stir into skillet. Bring to boil, stirring frequently. Return chicken to skillet. Cover. Cook 20 minutes or until chicken is cooked through and vegetables are tender.
