Springtime Frittata

Ingredients

1 tablespoon olive oil
1 small onion, chopped
1 medium zucchini, halved lengthwise and cut into 1/4-inch thick slices
1 cup diced ham
6 eggs
2 teaspoons McCormick® Gourmet Collection Cilantro Leaves
1/4 teaspoon salt
1/4 teaspoon McCormick® Gourmet Collection Black Pepper, Coarse Grind
3/4 cup grated Gruyere cheese

Directions

1. Heat oil in large ovenproof nonstick skillet on medium heat. Add onion and zucchini; cook and stir 2 minutes. Reduce heat to medium-low. Add ham; cook 2 minutes.

2. Beat eggs, cilantro, salt and pepper in medium bowl. Pour into skillet. Cook without stirring 5 minutes or until eggs are set on bottom. Sprinkle with cheese.

3. Broil 4 to 5 minutes until eggs are set and cheese is lightly browned.
