Cajun Jambalaya Pasta

Turn up the flavor at dinnertime with Cajun-spiced chicken, shrimp, bell peppers and tomatoes over linguine.

8 ounces linguine

4 tablespoons butter, divided

1 pound boneless skinless chicken breasts, cubed

1 package McCormick® Gourmet Smoked Sausage & Pepper Creole Jambalaya Recipe & Seasoning Mix

1/2 cup Kitchen Basics® Original Chicken Stock or low sodium chicken broth

1 1/2 cups assorted bell pepper strips

1 red onion, thinly sliced

1 cup diced tomatoes

1/2 pound large shrimp, peeled and deveined

1. Cook pasta as directed on package. Drain well.

2. Meanwhile, melt 2 tablespoons of the butter in large nonstick skillet on medium-high heat. Add chicken and Seasoning Mix; cook and stir 4 minutes or until chicken is no longer pink.

3. Stir in stock and remaining 2 tablespoons butter. Add bell peppers and onion; cook and stir 2 minutes. Add tomatoes and shrimp; cook and stir 3 minutes or just until shrimp turn pink and chicken is cooked through. Serve over cooked pasta.
